I did my first track day and had fun so looking to invest in a square wheel and tyre setup, so wondering what people are going for?

There's a thread here https://www.nissanzclub.com/forum/threads/18-x-10-5-square-fitment.8161/ with lots of good info, so I was also considering going 18x10.5 with 295/35 CR-S, but wondering what others have tried and do/don't recommend?

The Z can fit up to 315's square if you are motivated enough (-3 camber, pull)

I think 18x10.5 or 11 with +15 to +25 is a fairly common size range from Enkei or Konig

275 , 285, 295 is also fairly common for the 200TW track tire category

Some of those grippy 200tw tires are intended for one or two hard lips before needing to cooler off (A052)

Some are endurance based and will last for lap after lap (AD09)

You said you were running 275/40 on an 11 inch rim. That would be quite stretched wouldn't it?

For width reference here is my 285/35 RE71-RS on 10.5" Nismo V2 wheel +23, my square set.

would not call these as stretched by any definition

pretty much all track tire makers are gonna lie and give you more width than they advertise
it is racing tradition to cheat afterall
